Almost a year na din nung huli akong mag-post sa food blog kong ito. Pasensiya na at nagkaroon lang ng problema. Sana lang ay maipagpatuloy ko pa ito at marami na din ang nag-aabang sa aking pagbabalik. I just hope na patuloy nyo pa din akong suportahan.<br />

Nitong nakaraan kong pamamalengke may nakita akong himay na na laman ng alimasag (crab) na ibinebenta sa parte ng mag-iisda. Kahit hindi ko pa itinatanong kung magkano ang kilo nito at napabili na ako agad at ang nasa isip ko lang ay masarap itong gawing torta. Masarap ito na ang kasamang sawsawan ay patis na may calamansi o kaya naman ay toyo na may calamansi. Pwede din naman ang sweet-chili sauce or ordinaryong catsup. Try nyo din po.<br />

TORTANG ALIMASAG (Crab Meat)<br />
<br />
Mga Sangkap:<br />
1/2 kilo Crab Meat / Hinimay na laman ng alimasag<br />
2 pcs. medium size Potatoes (cut into small pieces)<br />
1 cup Green Peas<br />
1 pc. large size Red Bell Pepper<br />
4 pcs. Calamansi<br />
3 tbsp. Soy Sauce <br />
5 cloves Minced Garlic<br />
1 pc. White Onion (chopped)<br />
2 pcs. Tomatoes (diced) <br />
3 tbsp. Canola Oil / more for frying<br />
Salt and pepper to taste<br />
1 tsp. Maggie Magic Sarap <br />
5 pcs. Fresh Eggs (beaten)<br />
<br />
Paraan ng pagluluto:<br />
1. Sa isang kawali igisa ang bawang, sibuyas at kamatis sa mantika.<br />
2. Ilagay na din ang patatas at red bell pepper. Halu-haluin at hayaang maluto ang patatas.<br />
3. Sunod na ilagay ang crab meat, green peas at timplahan ng katas ng calamansi, asin, paminta at toyo. Halu-haluin.<br />
4. Tikman at i-adjust ang lasa. Patayin na ang apoy.<br />
5. Sa isang bowl, batihin ang itlog kasama ng Maggie Magic Sarap.<br />
6. Ihalo sa binating itlog ang ginisang crab meat.<br />
7. Sa isang non-stick na kawali i-prito ang pinaghalong sangkap sa nais na laki.<br />
8. Lutuin din ang kabilang side. Para gawin ito, kumuha lang ng plato na mas malaki sa sukat ng kawali. Itaob ang plato at saka paligtarin ang kawali. Ibalik ang niluluto sa kawali.<br />

Actually, marami na din akong na-post na recipe nito sa archive. Minarapat ko lang na i-post ulit with the latest picture para sa mga bago pa lang na sumusubaybay sa food blog kong ito. Mayroon ding nag-message sa akin na i-post ko nga daw ang recipe para magaya niya.<br />

Madali lang naman ang appetizer na ito. Ang mahirap ay yung pag-hanap ng mga sangkap at yung mismong pag-assemble. Kapag hindi ka kasi mabilis sa pag-roll masisira o mapupnit lang yung wrapper.<br />

Pero winner talaga ang spring roll na ito. Hina-hanap-hanap talaga sa akin ito kapag may espesyal na okasyon sa amin. Try nyo din po.<br />

<b>CRAB STICK and CUCUMBER SPRING ROLL</b><br />
<br />
Mga Sangkap:<br />
Rice Paper<br />
Crab Sticks (cut into strips)<br />
Cucumber (cut into strips)<br />
Romaine Lettuce<br />
Cashiew Nuts (durugin)<br />
For the sauce:Mayonaise<br />
All Purpose Cream<br />
Peanut Butter<br />
Sesame Oil <br />
Salt and pepper to taste<br />
<br />
To assemble:<br />
1. Ilubog ang 1 piraso ng rice paper sa tubig.<br />
2. Ilatag ito sa isang plato at ilagay ang 1 pirasong dahon ng lettuce, kaunting crab sticks, kaunting pipino at dinurog na cashiew nuts.<br />
3. I-roll ito ng mahigpit...nakasara ang dalawang gilid...at hiwain ng pahalang sa gitna. Ulitin lamang ito sa lahat ng mga sangkap.<br />
4. For the sauce: Paghaluin lang ang Mayonaise, all purpose cream, peanut butter, sesame oil at kaunting asin at paminta. Para sa dami ng gagamitng mga sangkap, tantyahin lamang ang dami depende sa dami ng spring roll na gagawin.<br />

December 31, 2016 habang naghahanda ako para sa mga ihahanda para sa media noche, nagdala ng pagkalaki-laking lapu-lapu ang pamangkin ng aking asawa na si Japok. Pinapaluto daw ito ng aking bayaw na kanyang tatay para pagsaluhan nga sa media noche.<br />
<br />
Sa isip ko, dalawang luto ang pwedeng gawin sa isda. Yung may sweet and sour sauce at yung steam. Nag-suggest ako ng steam. Sa isip ko kasi mas madali ang trabaho at hindi masyadong marami ang sangkap na gagamitin.<br />
<br />
Ang naging problema ko lang dito ay ang steamer na gagamitin. Sa laki ng lapu-lapu, walang steamer na ganun kalaki para magkasya ito. Ayoko namang putulin ang isda para magkasya. Ang ginawa ko na lang pinakuluan ko ito sa kumukulong tubig na tinimplahan ng mga pampalasa. Ayos din naman.<br />
<br />
At ito na nga ang kinalabasan ng aking Steamed Lapu-lapu. Masarap at pang-espesyal na okasyon talaga. Yum yum yum!!!!<br />

<b>STEAMED LAPU-LAPU</b><br />
<br />
Mga Sangkap:<br />
Large size Lapu-lapu<br />
2 tbsp. Sesame Oil<br />
2 thumb size Ginger (pounded)<br />
Leeks<br />
2 pcs. Onion (sliced)<br />
Salt and pepper to taste <br />
Mayonaise<br />
Hard boiled Eggs<br />
Romaine Lettuce<br />
Carrots (cut into small pieces)<br />
<br />
Paraan ng pagluluto:<br />
1. Timplahan ang lapu-lapu ng asin at paminta. Hayaan ng ilang sandali.<br />
2. Sa isang kawa o malaking kawali, magpakulo ng tubig na may sibuyas, pinitpit na luya, leeks, asin, paminta at sesame oil.<br />
3. Pakuluin muna ang tubig ng mga 5 minuto bago ilagay ang isda. Hayaang kumulo hanggang sa maluto ang isda. Palamigin<br />
4. Sa isang bowl, paghaluin ang mayonaise at kaunting asin at paminta.<br />
5. Ipahid ito sa katawan ng isda.<br />
6. I-decorate ang nilagang itlog at hinwang carrots sa ayos na gusto ninyo.<br />

Basta espesyal na okasyon espesyal din at mga kakaiba ang inihahanda o niluluto ko. Yun din kasi ang gusto ng aking asawang si Jolly. Kagaya nitong nakaraan naming noche buena, mga kakaiba o espesyal na putahe ang aking inihanda.<br />

Isa na dito itong California Maki with Crab Salad Toppings. Nagaya ko ito sa isang Japanese restaurant na nakainan ko. Yun lang hindi ganun kaganda ang hiwa komo ordinary knife lang ang ginamit. Pero panalo ang lasa at sarap nito. Para ka na ding kumain sa isang mamahaling Japanese restaurant.<br />

CALIFORNIA MAKI with CRAB SALAD TOPPINGS<br />
<br />
Mga Sangkap:<br />
Japanese Rice<br />
Crab Sticks<br />
Nori (that black seaweeds sheets)<br />
Japanese Mayonaise<br />
Ripe Mango (cut into strips)<br />
Salt and pepper to taste <br />

Note: Ang dami ng mga sangkap ay depende sa dami ng lulutuin. <br />
<br />
Paraan ng pagluluto/assemble:<br />
1. Isaing ang Japanese rice katulad ng pagsasaing sa ordinaryo na bigas. Palamigin.<br />
2. Gamit ang sushi matt, latagan ito ng plastic sa ibabaw.<br />
3. Lagyan ng nilutong Japanese rice sa ibabaw at ayusin ang pagkakalagay.<br />
4. Lagyan ng nori sheet at hilerahan ng hiniwang mangga at crab stick sa may bandang dulo.<br />
5. I-roll ito ng dahan-dahan at tiyakin na mahigpit ang pagka-rolyo.<br />
6. Hiwain ito sa nais na laki<br />
7. For the toppings, paghaluin lang ang hinimay na crab sticks, Japanese mayonaise at kaunting asin at paminta.<br />
8. Ilagay ito sa bawat piraso ng maki.<br />
<br />
Ihain na may kasamang kikoman sauce, calamansi at wasabi.<br />

Ito ang pasta dish na niluto ko nitong nakaraang media noche. Penne Pasta with Creamy Pesto Sauce.<br />

Gusto ng asawa kong si Jolly na ang mga ihahanda namin ay yung bihira lang namin makain. Naisip kong pesto sauce naman ang ilagay sa pasta dahil nagustuhan namin yung natikman namin na ganito ding luto sa isang Italian restaurant na nakainan namin. At para mas maging masarap nilagyan ko din ito ng twist. Nilagyan ko pa ito ng toasted cashiew nuts sa ibabaw to add additional texture. Also, pinaghalong mozzarela at cheddar ang inilagay kong cheese.<br />

<br />
<b>PENNE PASTA with CREAMY PESTO SAUCE</b><br />
<br />
Mga Sangkap:<br />
500 grams Penne Pasta (cooked according package directions)<br />
250 grams Cooked Sweet Ham (cut into small pieces) <br />
100 grams Fresh Basil Leaves<br />
1 cup Olive Oil<br />
250 grams Cashiew Nuts<br />
1 cup Mozzarela Cheese<br />
1 cup Cheddar Cheese<br />
2 tetra brick All Purpose Cream<br />
1/2 cup Melted Butter<br />
2 head Minced Garlic<br />
2 pcs. Onion (chopped)<br />
5 cloves minced Garlic<br />
Salt and pepper to taste<br />
<br />
Paraan ng pagluluto:<br />
1. Lutuin ang penne pasta according to package directions.<br />
2. Ilagay naman sa mainit na tubig ang fresh basil leaves. Hayaan ng mga 1 minuto. I-drain.<br />
3. Ilagay sa blender ang binanliang basil leaves, cashiew nuts (magtira ng kaunti pang-toppings), olive oil, 1 tbsp. minced garlic, 1 tetra pack All Purpose cream at kaunting asin at paminta. I-blender ito hanggang sa madurong ang lahat na mga sangkap.<br />
4. Sa isang kawali o kaserola, igisa ang bawang at sibuyas sa butter.<br />
5. Sunod na ilagay ang hiniwang hamon at timplahan ng kaunting asin at paminta.<br />
6. Sunod na ilagay ang ginawang pesto at ang 1 brick pang all purpose cream.<br />
7. Sunod na ilagay ang 1/2 cup na mozzarela cheese at 1/2 cup na cheddar cheese. Halu-haluin.<br />
8. Tikman ang sauce at i-adjust ang lasa.<br />
9. Patayin ang apoy at ihalo ang nilutong penne pasta. Haluing mabuti hanggang sa ma-coat ng sauce ang lahat ng past.<br />
10. Isalin sa isang lalagyan a ibudbod sa ibabaw ang natirang mozzarela at cheddar cheese. Ibudobod na din ang natirang cashiew nuts.<br />

Actually may recipe na po ako nito sa archive pero naisipan kong mag-post ng panibagong recipe dahil sa tingin ko ay may masarap ang version na ito at talaga namang nagustuhan ng panganay kong anak na si Jake. For sure kahit po kayo ay magugustuhan nyo din ito.<br />

<br />
<b>BABY BACK RIBS in HICKORY BARBEQUE SAUCE</b><br />
<br />
Mga Sangkap:<br />
<br />
About 1.5 kilos Baby Back Ribs<br />
2 tetra pack Clara Ole Hickory Barbeque Marinade Mix<br />
1 Head Minced Garlic<br />
2 pcs. Chopped Onions<br />
1 tsp. Freshly Ground Black Pepper<br />
1 can Sprite or 7Up Soda<br />
1/2 cup Soy Sauce<br />
1 tbsp. Worcestershire Sauce <br />
Salt to taste<br />
1/2 cup Brown Sugar<br />
<br />
Paraan ng pagluluto:<br />
1. I-marinade ang baby back ribs sa 1 tetra pack ng Clara Ole Hickory barbeque marinade, 1 can ng Sprite o 7Up Soda, paminta, bawang, sibuyas, worcestershire sauce at kaunting asin. Overnight o higit pa mas mainam.<br />
2. Sa isang kaserola, pakuluan ang baby back ribs kasama ang pinagbabaran nito hanggang sa lumambot ang karne. Maaaring lagyan pa ng tubig kung kinakailangan.<br />
3. Kung malambot na ang karne, isalang naman ito sa turbo broiler sa init na 250 degrees. I-roast ito ng mga 15 to 20 minutes o hanggang sa medyo mag-dark lang ang paligid nito.<br />
4. For the sauce: Ilagay ang 1 tetra pack pa ng Clara Ole Hickory barbeque marinade at brown sugar sa pinagpalambutan ng ribs.<br />
5. Halu-haluin ito hanggang sa medyo lumapot ang sauce.<br />
6. Tikman ang sauce at i-adjust ang lasa.<br />
7. Ibuhos ang ang sauce sa ibabaw ng ni-roast na baby back ribs.<br />

Sa bahay ng aking biyenan na si Inay Elo sa San Jose, Batangas kami nag-media noche at sumalubong sa Bagong Taong 2017. Dapat simple lang naman ang aking inihanda at yung iba naman ay dala ng aking mga hipag. Birthday din kasi ng January 1 ang namayapa kong biyenang lalaki na si Tatay Tonying kaya napagkaisahan na sa bahay na lang ng biyenan kong babae magkainan ng media noche.<br />

Ang Noche Buena ay isa sa mga tradisyon nating mga Pilipino sa panahon ng Kapaskuhan. Hinihintay natin ang alas-12 at sabay-sabay na pinagsasaluhan ng ating pamilya ang masasarap na pagkain.<br />

This year, sa bahay ng aking biyenan na si Inay Elo kami nag-spend ng aming Noche Buena. Simple lang naman ang aking inihanda komo kabi-kabila din naman ang mga kainan. <br />

Last last Sunday, nagkaroon ng Family Day ang pangalawa kong anak na si James sa Don Bosco Mandaluyong. Bale ang nangyari, nag-toka ang mga parents officer ng mga pagkain na dadalihin ng bawat estudyante. Buti na lang at medyo madali-dali ang na-toka sa aking anak. Rice o kaya naman ay Fried Rice. Yang Chow Fried Rice ang naka-specify pero ang ginawa ko ay all meat or meat overload na fried rice.<br />
<br />
Nakakatuwa naman kasi nung pinapanood ko yung mga nagkukuhanan ng pagkain, marami ang kumuha nung niluto ko. Sabagay, sino ba naman ang hindi matatakaw sa fried rice ko? Ito pa lang ay kumpleto na. Hehehehe.<br />

<br />
FRIED RICE MEAT OVERLOAD<br />
<br />
Mga Sangkap:<br />
10 cups Cooked Rice (jasmine or yung long grain ang gamitin)<br />
250 grams Ground Pork<br />
250 Grams Sweet Ham (cut into small pieces)<br />
250 grams Bacon (cut into small pieces)<br />
4 pcs. Chinese Chorizo (cut into small cubes)<br />
2 cups Mix Vegetables (corn, carrots, peas)<br />
4 pcs. Fresh Eggs (beaten)<br />
2 heads Minced Garlic<br />
Spring Onion<br />
2 tbsp. Sesame Oil<br />
Cooking Oil<br />
1 tsp. Maggie Magic Sarap <br />
Salt and pepper to taste<br />
<br />
Paraan ng pagluluto:<br />
1. Sa isang medyo malaking non-stick na kawali i-prito ang binating itlog sa kaunting mantika hanggang sa maluto. Hanguin sa isang lalagyan.<br />
2. Sa parehong kawali i-prito naman ang bawang hanggang sa mag-golden brown ang kulay. Hanguin sa isang lalagyan.<br />
3. Sunod na ilagay ang giniling na baboy at timplahan ng asin at paminta.<br />
4. Kapag nawala na ang pagka-pink ng giniling ilagay na ang ham, bacon at Chinese chorizo. Halu-haluin.<br />
5. Sunod na ilagay ang mix vegetables at kanin. Halu-haluin.<br />
6. Timplahan ng asin at maggie magic sarap. Halu-haluin.<br />
7. Huling ilagay ang sesame oil. Haluin muli.<br />
8. Hanguin sa isang lalagyan at ilagay sa ibabaw ang chopped scrambled eggs, chopped spring onions at toasted garlic.<br />

Kapag kumakain daw tayo, ang unang kumakain ay ang ating mga mata at pag-iisip. Kung baga, mas ginaganahan tayong kumain kapag maganda ang itsura nakakatakam ang pagkaing naka-hain sa atin.<br />
<br />
But ofcourse hindi dapat makalimutan ang lasa ng pagkain na ating ihahain. Baka naman maganda nga tingnan pero wala namang lasa. Kaya nga sa mga buffet na kainan tinitingnan ko muna lahat ng nakahain bago ako kumuha. Balik na lang ulit kung nagustuhan ko ang pagkain.<br />
<br />
Ganito ang ginawa ko sa simpleng daing na bangus na ito. Simpleng timpla sa daing na bangus at pagkatapos ay nilagyan ko ng ginisa sa luya na pyster sauce. At para maging katakam-takam sa mata, nilagyan ko pa ito ng caramelized onion at toasted garlic bits sa ibabaw.<br />

Di ba nakakatakam naman talaga? Try nyo din po.<br />

<b>DAING na BANGUS with OYSTER SAUCE</b><br />
<br />
Mga Sangkap:<br />
2 pcs. medium size Boneless Bangus<br />
1/2 cup Oyster Sauce<br />
1 thumb size Ginger (cut into strips)<br />
3 pcs. White Onions (cut into rings)<br />
5 cloves Minced Garlic<br />2 tbsp. Toasted Garlic Bits<br />
1/2 cup Soy Sauce<br />
1 tsp. Cornstarch dissolved in 1 cup Water<br />
2 tbsp. Brown Sugar<br />
1 tsp. Sesame Oil<br />
<br />
Salt and Pepper to taste<br />
1 tsp. Maggie Magic Sarap <br />
Cooking Oil for frying.<br />
<br />
Paraan ng pagluluto:<br />
1. Timplahan ang daing na boneless bangus ng asin, paminta at maggie magic sarap. Hayaan ng ilng sandali.<br />
2. I-prito ito sa kumukulong mantika hanggang sa maluto. Hanguin sa isang lalagyan.<br />
3. For the sauce: Igisa ang onion rings sa mantika hanggang sa medyo maluto lang ito. Hanguin sa isang lalagyan<br />
4. Sunod na igisa ang luya at bawang. Halu-haluin.<br />
5. Ilagay ang toyo, oyster sauce at ang tinunaw na corntarch.<br />
6. Ilagay na din ang brown sugar at ang sesame oil. Halu-haluin hanggang sa lumabot ang sauce.<br />
7. Tikman ang sauce at i-adjust ang lasa.<br />
8. Ibuhos ang sauce sa bawat piraso ng piniritong bangus at saka ilagay sa ibabaw ang piniritong onion rings at ang toasted garlic bits.<br />

Amoy na amoy na natin talaga ang kapaskuhan. Hindi lamang sa ating
mga nakikitang dekorasyon sa mga tahanan, mga daan at maging sa mga mall
ay bakas na bakas at dama natin ang nalalapit na pasko.<br />

Marami
din sa atin ay abalang-abala na sa pag-iisip kung ano ang masarap
ihanda para sa ating Noche Buena. Yung iba gusto ay yung kakaiba at
hindi pangkaraniwan nating kinakain. Yung iba naman gusto yung
traditional o classic na inihahanda sa kapaskuhan at ginagawa na lang
nilang extra special.<br />
<br />
Medyo mahirap din na kakaiba yung
ihanda. Una: baka pumalpak ang pagkakaluto...pangalawa: baka hindi
magustuhan ng mga bata kasi hindi nila kilala yung pagkain...
pangatlo: baka magastos. Hehehehe<br />
<br />
So para sa akin
okay siguro na yung classic dishes na lang ang ating ihanda pero gawin
natin extra special ang sahog at ang pagkakaluto.<br />
<br />
Kagaya
nitong classic spaghetti na ito. Madali lang gawin at nilagyan ko lang
ng extra pang mga sahog na siguradong kong magugustuhan ng mga
bagets. Try nyo din po.<br />

<b>SPAGHETTI MEAT OVERLOAD in ITALIAN SAUCE</b><br />
<br />
Mga Sangkap:<br />
1 kilo Spaghetti Pasta (cooked according to package direction)<br />
1/2 kilo Ground Beef<br />
250 grams Bacon (cut into small pieces)<br />
250 grams Hotdogs (sliced)<br />
250 grams Sweet Ham (cut into small pieces)<br />
50 grams Pepperoni<br />
1 kilo Italian Style Spaghetti Sauce<br />
2 cups Grated Cheese<br />
1 cup Cream Cheese <br />
2 pcs. White Onion (chopped)<br />
1 head Minced Garlic<br />
1 tsp. Dried Basil<br />
1 tsp. Dried Oregano<br />
1 tsp. Ground Black Pepper<br />
1 tbsp. Brown Sugar<br />
1/2 cup Olive Oil<br />
Salt to taste<br />
<br />
Paraan ng pagluluto:<br />
1. Lutuin ang spaghetti pasta according to package direction.<br />
2.
Sa isang medyo malaking kawali o kaserola, igisa ang bawang at sibuyas
sa olive oil. Ilagay na din ang dried basil at oregano.<br />
3. Sunod na ilagay ang ground beef at timplahan ng asin at paminta. Halu-haluin para hindi manikit sa bottom ng lutuan.<br />
4. Kapag nawala na ang pagka-pink ng karne ilagay na ang hotdogs, bacon, ham at pepperoni. Halu-haluin ng mga 2 minuto.<br />
5. Ilagay na italian style spaghetti sauce. Halu-haluin at hayaang kumulo sa katamtamang lakas ng apoy.<br />
6. Sunod na ilagay ang cream cheese at ang brown sugar.<br />
7. Tikman ang sauce at i-adjust ang lasa.<br />

To
serve: Pwedeng nakahalo na ang sauce sa pasta at ibudbod na lang sa
ibabaw ang grated cheese. Pwede din na nakahiwalay ang pasta, sauce at
cheese at bahala na lang ang kakain na kumuha ng nais na dami nito.<br />

Hindi kami madalas mag-ulam ng karneng baka. Bukod kasi sa may kamahalan ang presyo nito, hindi din ganun karami ang luto na alam kong gawin. Pangkaraniwan luto na nagagawa ko lang dito ay ang nilaga at ang bistek.<br />

Minsan sa pamamalengke ko, may nakita akong magandang cut at klase ng karneng baka. Kaya naman kahit medyo may kamahalan ang kilo nito ay bumili na din ako. Naisip ko na lutuin ito with oyster sauce at lalagyan ng broccoli. Kaso, walang akong nabiling broccoli sa palengke. Ang ginawa ko na lang sayote ang aking inilagay at okay naman din ang kinalabasan. Halos pareho lang din ng beef broccoli na gustong lutuin.<br />

<b>BEEF CHAYOTE in OYSTER SAUCE</b><br />

Mga Sangkap:<br />
1 kilo Beef (thinly sliced)<br />
1/2 cup Oyster Sauce<br />
1 pc. large Chayote or Sayote (cut into sticks)<br />
2 thumb size Ginger (cut into strips)<br />
5 gloves Minced Garlic<br />
2 pcs. Large White Onion (cut into rings)<br />
1 tsp. Sesame Oil<br />
1/2 cup Soy Sauce<br />
1 tbsp. Brown Sugar<br />
3 tbsp. Cooking Oil<br />
1 tsp. Cornstarch <br />
Salt and pepper to taste<br />
<br />
Paraan ng pagluluto:<br />
1. Timplahan ng asin at paminta ang hiniwang karne ng baka. Hayaan ng ilang sandali. <br />
2. Sa isang non-stick na kawali o kaserola, i-brown ang bawat piraso ng karne sa mantika. Hanguin sa isang lalagyan.<br />
3. Sa parehong kawali, igisa ang sibuyas hanggang sa medyo maluto lang. Hanguin sa isang lalagyan.<br />
4. Sunod na igisa ang luya at ang bawang.<br />
5. Ibalik sa kawali ang na-brown na karne ng baka.<br />
6. Lagyan ng toyo at mga 2 tasang tubig. Takpan at hayaang kumulo hanggang sa lumambot an karne. Maaring lagyan pa ng tubig kung kinakailangan.<br />
7. Kung malambot na ang karne, ilagay na ang chayote, oyster sauce at brown sugar. Halu-haluin at hayaang maluto ang gulay.<br />
8. Huling ilagay ang tinnaw na cornstarch para lumapot ang sauce at ang sesame oil.<br />
9. Tikman ang sauce at i-adjust ang lasa.<br />
10. Hanguin sa isang lalagyan at ilagay sa ibabaw ang piniritong sibuyas.<br />

Pangkaraniwang ipinapalaman natin sa inihaw na bangus ay ang sibuyas at kamatis. Sa probinsya nga binabalot pa natin ito sa dahon sa saka iihaw sa baga. Masarap ito dahil nandun yung smokey taste ng nasunog na dahon ng saging na nagdadagdag ng flavor sa bangus.<br />

Marami na din akong version na nagawa sa inihaw na bangus na ito. At ang isa sa pinaka-sikat nga ay itong Cheesy inihaw na bangus. Meron pa ngang nag-email sa akin na nasa ibang bansa at naging standard na sa kanilang tahanan na lagyan ng cheese ang kanilang inihaw na bangus. Nakakatuwa di ba?<br />

1. implahan ng asin, paminta at Maggie Magic Sarap ang boneless bangus. Hayaan ng ilang sandali.<br />
2. Sa isang bowl paghaluin ang hiniwang sibuyas, kamatis, fresh basil leaves at grated cheese.<br />
3. Ipapalaman ito sa bangus at balutin ng aluminum foil. Kung mayroon kayong dahon ng saging balutin muna ito dito bago ibalot naman sa aluminum foil.<br />
4. I-ihaw ito sa baga o sa stove top griller hanggang sa maluto.<br />

5. For the glaze: Sa isang kawali, i-prito ang sibuyas sa butter hanggang sa medyo maluto. Hanguin sa isang lalagyan.<br />

Isa sa mga recipes na nauna kong na-post sa blog na ito ay itong Pork Hamonado. Sabi nga nung isang nag-comment sa mga espesyal na handaan lang daw siya nakakatikim ng pork dish na ito. Sabi din niya, di daw niya masabi ang kakaibang sarap at linamnam nito. Kahit ang kaibigan kong si Ate Joy, gustong-gusto din niya ang pork dish na ito.<br />

Akala ng marami ay mahirap gawin o lutuin ito pero sa totoo lang ay napakadali lang. Kahit baguhan lang sa pagluluto ay matututunan ang dish na ito. Bakit naman? Bukod kasi sa simple lang ang paraan ng pagluluto, ay iilan din lang ang sangkap na kinakailangan. Try nyo din po.<br />

PORK HAMONADO ESPESYAL<br />
<br />
Mga Sangkap:<br />
2 kilos Pork Kasim or Pigue (Yung may balat pa at taba. Ipahiwa na parang log o pahaba)<br />
3 cups or 1 medium size can Pineapple Juice (sweetened)<br />
2 pcs. Onion (chopped)<br />
1 head Minced Garlic<br />
1 cup Brown Sugar<br />
1/2 cup Soy Sauce<br />
Salt and pepper to taste<br />
<br />
Paraan ng pagluluto:<br />
1. Ibabad ang hiniwang karne ng baboy sa pineapple juice na may asin, paminta, bawang at sibuyas. Mas matagal mas mainam. Overnight is okay.<br />
2. Sa isang non-stick na kaserola ilagay ang binabad na karne kasama ang pinagbabaran nito. Pakuluan ito sa katamtaman lakas ng apoy.<br />
3. After ng mga 30 minuto ilagay ang toyo at brown sugar. Takpan muli at hayaang maluto hanggang sa kumonte na lang ang sabaw o sauce. Kung mauubos na ang sauce pero matigas pa ang karne, maaring lagyan pa ng pineapple juice.<br />
4. Tikman ang sauce at i-adjust ang lasa. Ang tamang lasa ay yung naglalaban ang alat, tamis at asim ng pineapple juice.<br />
5. Palamigin muna bago i-slice.<br />

1. Timplahan ang manok ng asin at paminta. Hayaan ng ilang sandali<br />

3. I-prito dini ang hiniwang saging na saba at kamote. Hanguin sa isang lalagyan. <br />

5. Ibalik sa kawali ang na-brown na manok at ilagay na din ang giniwag chorizo de bilbao.<br />

7. Ilagay na ang nilutong brown sugar, kamote, saging na saba at Baguio beans. Takpan muli ng mga 3 minuto.<br />

Ito ang isa pa sa mga dish na niluto ko nitong nakaraang kaarawan ng aking panganay na anak na si Jake. Fish Fillet with Chili-garlic-mayo dip.<br />

Paraan ng pagluluto:<br />
1. I-marinade ang cream dory sa katas ng lemon, lemon zest o yung ginadgad na balat ng lemon, Maggie magic Sarap at dinurog na paminta. Hayaan ng mga 30 minuto hanggang 1 oras.<br />
2. Ihalo sa minarinade na cream dory ang harina, cornstarch, bnating itlog at kaunting asin at paminta. Halu-haluin ito hanggang ma-coat ng batter ang lahat ng piraso ng fish fillet.<br />
3. I-prito ito ng lubog sa mantika hanggang sa mag-golden brown ang kulay. Hanguin sa isang lalagyan na may paper towel.<br />
4. For th dip: Paghaluin lang ang chili-garlic sauce at mayonaise. Pwede din lagyan ng kaunting paminta at asin.<br />

Ito yung rice dish na niluto ko para sa kaarawan ng panganay kong anak na si Jake. Request niya ito kay ito ang niluto ko.<br />

Madali lang naman gawin ang rice dish na ito. Ang importante lang ay tama ang sangkap na gagamitin at yung timing sa pagluluto nito.<br />
<br />
Hindi ko matawag na yang chow fried rice ito komo wala naman akong hipon na inilagay. Mostly, mga karne anag akibng inilagay kaya tinawag ko na lang ito na Fried Rice Meat Overload.<br />
<br />
Kahit naman ano ay pwedeng ilagay sa fried rice. Mas mainam lang ay yung strong ang flavor para lumasa talaga sa kanin.<br />

<br />
<b>FRIED RICE MEAT OVERLOAD</b><br />
<br />
Mga Sangkap:<br />
8 cups Cooked Rice (jasmin or long grain rice)<br />
1 cup Mix Vegetables (corn, carrots, green peas) <br />
3 pcs. Fresh Eggs (beaten) <br />
Spice Ham (cut into cubes)<br />
Chorizo de Bilbao (cut into small pieces)<br />
Bacon (cut into small pieces)<br />
1 head Minced Garlic<br />
1 pc. Onion (chopped)<br />
1 tsp. Sesame Oil <br />
Cooking Oil<br />
Spring Onion (chopped)<br />
Salt and pepper to taste<br />
<br />
Paraan ng pagluluto:<br />
1. Sa isang non-stick na wok, i-prito ang binating itlog sa kaunting mantika. Hanguin sa isang lalagyan.<br />
2. Sa parehong kawali, igisa ang bawang at sibuyas sa kaunting mantika.<br />
3. Isunod na agad ang spice ham, chorizo de bilbao at bacon.<br />
4. Isunod na din ang mix vegetables at halu-haluin.<br />
5. After ng ilang sandali ilagay na ang dinurog na kanin at timplaga ng asin at paminta. Patuloy na halu-haluin para makalat ang flavor sa kanin.<br />
6. Huling ilagay ang sesame oil <br />
7. Maaring tikman para mai-adjust ang lasa.<br />
8. Hanguin sa isang lalagyan at ibudbod sa ibabaw ang chopped spring onions at chopped scrambled eggs.<br />

Ito ang isa pa sa mga dish na niluto nitong nakaraan kong kaarawan. Itong Braised Pork Tenderloin in Hoisin Sauce.<br />

Actually, para din siyang pork hamonado. Yun lang, pork tenderloin or lomo nga ang ginamit dito at bukod sa pineapple juice nilagyan ko din ito ng Hoisin sauce.<br />
<br />
Masarap ito. Kakaiba yung lasa ng tamis ng sauce dahil sa hoisin sauce. At tamang-tama din ang lambot ng karne komo lomo nga ang ginamit. <br />
<br />
Ayos na ayos itong ihanda sa mga espesyal na okasyon lalo na din na papalapit na ang pasko. Try nyo din po.<br />

<br />
<b>BRAISED PORK TENDERLOIN in HOISIN SAUCE</b><br />
<br />
Mga Sangkap:<br />
1 kilo Pork Tendeloin or Lomo<br />
1 can Pineapple Juice<br />
1/2 cup Hoisin Sauce<br />
1/2 cup Soy Sauce<br />
1 head Minced Garlic<br />
2 pcs. Onion (chopped)<br />
2 tbs. Brown Sugar<br />
1 tsp. Sesame Oil<br />
Salt and pepper to taste<br />
<br />
Paraan ng pagluluto:<br />
1. Ibabad ang pork tenderloin o lomo sa pineapple juice at timplahan ng bawang, sibuyas, asin at paminta. Ibabad ito ng overnight o higit pa.<br />
2. Sa isang non-stick na kawali na may takip o kaserola, ilagay ang binabad na karne (kasama ang pinagbabaran). Pakuluan ito hanggang sa kumonte na lang ang sabaw.<br />
3. Kapag kumonte na ang sabaw, ilagay na ang toyo, hoisin sauce at brown sugar. Hayaang kumulo ng mga 3 minuto.<br />
4. Tikman ang sauce at i-adjust ang lasa.<br />
5. Huling ilagay ang sesame oil.<br />
6. Palamigin sandali at saka i-slice ang karne.<br />
7. Ilagay ang natirang sauce sa ibabaw.<br />

September 22 ang araw ng kapanganakan ng panganay kong anak na si Jake. At kagaya ng mga nakaraan niyang birthday, iniraraos namin ito kahit papaano sa aming tahanan.<br />

At ganun nga ang nangyari. Tanghali pa lang ng Sabado ay nag-simula na akong magluto para sa kanyang mga bisita. Sabi niya mga 15 daw ang ine-expect niya na guest kaya naman nag-handa ako ng para sa 20 to 25 na guest naman.<br />

Sa may birthday din nang-galing kung ano ang gusto niyang ihanda ko. Ganun naman lagi ang ginagawa ko. Kung ano ang gustong handa ng may birthday, yun ang inihahanda ko.<br />

Ang Lechon Macau ay para din lang yung paborito nating Lechon Kawali o yung Bagnet ng Ilocos. ang pagkakaiba lang nito ay tinitimplahan pa ito ng herbs and spices habang pinapakuluan at pini-prito.<br />

Actually na-kopya ko lang ang recipe na ito sa isa pang food blog at hindi ko alam kung ganito ba talaga ang recipe na ginagamit sa Macau. Ito pala ang isa pa sa mga dish na niluto ko nitong nakaraan kong kaarawan. Masasabi ko na masarap dahil may kakaiba itong lasa kumpara sa simple nating lechon kawali. Try nyo din po.<br />

<br />
<b>LECHON MACAU</b><br />
<br />
Mga Sangkap:<br />
2 kilos Pork Belly (cut into blocks)<br />
2 tsp. 5 Spice Powder<br />
1 tsp. Garlic Powder<br />
2 pcs. Dried Laurel Leave<br />
2 pcs. Onion (quartered)<br />
1 head Garlic (sliced)<br />
2 tbsp. Rock Salt<br />
1 tsp. Maggie Magic Sarap <br />
1 tsp. Ground Black pepper <br />
Cooking Oil for Frying<br />
<br />
Paraan ng pagluluto:<br />
1. Sa isang heavy bottom na kaserola ilagay ang pork belly, 1 tsp. ng 5 spice powder, sibuyas, bawang, laurel, asin at paminta. Lagyan ng tubig. Dapat nakalubog ang tubig.<br />
2. Pakuluan ito ng mga 1 oras o higit pa hanggang sa lumambot.<br />
3. Hanguin sa isang lalagyan at palamigin.<br />
4. Kung malamig na tusik-tusikin ng tinidor ang balat ng parte ng pork belly na nilaga. Mas maraming tusok mas mainam. <br />
5. Mula sa balat, hiwaan ang nilagang liempo ng mga 1/2 inch ang pagitan. Ang hiwa ay hanggang sa umabot sa laman.<br />
6. Sa isang bowl paghaluin ang 1 tsp. pa ng 5 spice powder, garlic powder at Maggiwe Magic Sarap.<br />
7. Ipahid ito sa palibot at lahat ng singit ng hiniwaang pork belly.<br />
8. Ilagay ito sa freezer ng over night bago i-prito.<br />
9. From the freezer i-prito ito sa kumukulong mantika hanggang sa mag-pop ang balat ang mag-golden brown ang kulay. (Dapat lubog sa mantika.)<br />
10. Hanguin sa isang lalagayan at palamigin muna bago i-chop.<br />

Ihain na may kasamang lechon sauce o suka na may calamansi, sili at toyo.<br />
